Fermentation in stainless steel tanks at a controlled temperature,
using grapes from our vineyards in Rioja Alta. Malolactic fermentation takes place in tank,
after which the wine is aged in American oak barrels for one year.

COTO DE CALERUEGA ROBLE

From Ribera del Duero, this red wine comes from high-altitude vineyards on clay-loam soils and blends Tempranillo with a touch of Merlot. Three months in 225-liter oak barrels give it body and a spiced layer without masking the fruit.

Palate: Good structure, with ample, fresh volume. Round, smooth tannins. A balanced, well-rounded wine.

After gentle destemming and crushing, the grapes went into tanks where alcoholic fermentation took place at a temperature below 28°C.

PAZO DE SEOANE            

After settling, the clean must begins fermentation at a controlled temperature. While in the tanks, the wine remains in contact with its fine lees, which are kept in suspension through periodic stirring (bâtonnage), adding complexity and density.
